Strawberry, Hakurei Turnip, and Kohlrabi salad with Fresh Strawberry Vinaigrette
Serves: 1 serving
 
Ingredients
  • - 2 cups mixed greens, lettuce, turnip tops, radish tops, pea shoots
  • - ½ small kohlrabi, peeled and cut into ¼" batons
  • - 1 Hakurei salad turnip, thinly sliced
  • - 3-4 fresh, ripe strawberries, sliced
  • - 1 teaspoon raw sunflower seeds
  • - Strawberry vinaigrette
  • - 1 heaping cup fresh, ripe strawberries, sliced
  • - 2 tablespoons red wine vinegar
  • - 2 tablespoons extra virgin olive oil
  • - 1 tablespoon raw or refined honey (preferably raw)
  • - pinch salt and pepper, to taste
Instructions
  1. Mix greens and place on a dinner plate. Top with kohlrabi and salad turnips slices. Evenly distribute strawberry slices around the salad and then top with sunflower seeds. Drizzle with dressing right before serving.
  2. For vinaigrette: In a blender, place all ingredients. Blend until smooth. Taste for salt, honey and pepper level and adjust as necessary.
