Turkey and Bok Choy "Larb"
Serves: 4 servings
 
Ingredients
  • - 1 pound ground pastured turkey
  • - 1 tablespoon grated fresh ginger
  • - 2 teaspoons minced garlic scape
  • - 3 small scallions, minced
  • - 3-4 large leaves bok choy, (to make 2 cups minced)
  • - 2-3 teaspoons Vietnamese fish sauce, Red Boat brand is the healthiest I've found
  • - 3 teaspoons coconut sugar, or 2 teaspoon granulated sugar
  • - juice of ½ lime
  • - 1 tablespoon fine rice flour
  • - cabbage leaves
Instructions
  1. Chop bok choy and place in the bowl of a food processor. Pulse several times until mixture is minced smaller than rice kernels.
  2. Cook ground turkey, breaking meat up with a spatula while it cooks, until browned and cooked through. Add ginger, garlic scapes, scallions and bok choy. Cook, stirring frequently, until bok choy is tender and a good amount of water has cooked off. Stir in the fish sauce, sugar, lime juice and rice flour. Cook until thickened. If mixture needs more flavor add a bit more fish sauce. Serve in cabbage leaves.
