Adobo Chicken with Mixed Herb Chimichurri

Ingredients
  • - For Vegetables:
  • - 2 med Kohlrabi, peeled and chopped into ⅓" pieces
  • - 2 med zucchini, chopped into ½" pieces
  • - 2 small fennel bulb, chopped into ⅓" pieces
  • - 1 large sweet potato, chopped into ½" pieces
  • - about 3 cups Mixed herbs, dill, cilantro, parsley, oregano, basil
  • - 3 cloves garlic, roughly chopped
  • - extra virgin olive oil
  • - 1 tablespoon sherry vinegar or red wine vinegar, or to taste
  • - ¼ teaspoon red pepper flakes
  • - salt, to taste
  • - For chicken:
  • - 6-8 bone in chicken thighs and drumsticks
  • - about 1-2 tablespoon adobo seasoning with salt
Instructions
  1. For vegetables: Preheat oven to 400℉. Place mixed herbs, garlic, and pepper flakes in a food processor. Process while slowly drizzling olive oil in feed tube, until mixture becomes finely minced and there is enough oil to give the mixture a pesto-like consistency. Add sherry vinegar and salt to taste.
  2. Place vegetables in a large bowl. Pour chimichurri mixture over vegetables and toss well to coat evenly. Spray a 17½ X 12½ inch rimmed baking sheet with oil spray (or brush with olive oil). Pour vegetables in baking sheet and spread out evenly in one layer. Cover with foil. Bake in pre-heated oven for 15-20 minutes. Remove foil and stir vegetables well. Once again, spread vegetables evenly in one layer in pan.
  3. Rub chicken pieces with adobo seasoning. If you plan to eat the skin, use less seasoning (or else it will be too salty). However, if you don’t plan to eat the skin, use more seasoning so the salt will penetrate into the meat. Place the chicken pieces on top of the vegetables. Spread them out so that they do not touch each other but cover the entire area of the pan. Return, uncovered, to the oven and bake for 40-45 minutes or until all chicken pieces register at least 165℉ at their thickest part. If some pieces are done well before others, remove them to a plate and cover with foil while the rest of the pieces continue to cook.
  4. Serve chicken pieces with a scoop of vegetables.
