5- Spice Roasted Turnip and Apple Salad with Pomegranate Seeds and Pistachios

Ingredients
  • - For Dressing:
  • - 2 tablespoons Maple Balsamic Vinegar, or 2 tablespoons Balsamic mixed with 2 teaspoons maple syrup
  • - 1 tablespoon red wine vinegar
  • - 1 teaspoon minced shallots
  • - 5 tablespoons extra virgin olive oil
  • - ½ teaspoon 5-spice powder
  • - salt and pepper to taste
  • - For Salad:
  • - 5-6 cups arugula, or one Holcomb bag
  • - 2 medium turnips, peeled and cut into ⅓" batons
  • - 1 large crisp apple (Gala or Granny Smith), peeled and cut into ⅓" batons
  • - 2 tablespoons extra virgin olive oil, divided
  • - ½ teaspoon Kosher salt, divided
  • - ½ teaspoon 5-spice powder, divided
  • - ½ cup frresh pomegranate seeds
  • - ½ cup lightly toasted pistachio nuts
Instructions
  1. For Dressing: Using a small blender or an immersion blender, blend dressing ingredients until emulsified. Season to taste with salt and pepper.
  2. For Roasted Turnips and Apples: Preheat oven to 400. Spray a rimmed baking sheet with coconut or olive oil. Toss turnips with 1 tablespoon olive oil, ¼ teaspoon kosher salt, and ¼ teaspoon 5-spice powder until well coated. Place on baking sheet and spread to a single layer across the sheet. Cover tightly with foil. Bake for 20 minutes. Remove from oven. Meanwhile, toss apples with 1 tablespoon olive oil, ¼ teaspoon kosher salt, and ¼ teaspoon 5-spice powder. Add apples to turnips on pan and mix well. Spread apples and turnips into a single even layer on pan. Return pan, uncovered, to oven and cook for an additional 15 minutes or so, stirring and redistributing apples and turnips a couple of times, until they are tender and caramelized. Remove from oven and allow to cool.
  3. For Salad: If serving all the salad at one time, toss arugula with cooled turnips and apples, dressing, pomegranate seeds, and pistachio nuts. Serve immediately. Otherwise, place arugula on individual salad plates or bowls. Top with some turnips/apples, pomegranate seeds, and pistachio nuts. Drizzle on dressing and serve.
