Napa Cabbage Slaw with Peaches and Creamy Poppyseed Dressing
Serves: 4-6
 
Ingredients
  • - 1 small/medium Napa cabbage, thinly sliced, rinsed and dried
  • - 2 firm ripe peaches, peeled, cut into thin slices, then cut in ½
  • - ½ cup organic plain yogurt, can use Greek or lower fat yogurt
  • - ¼ cup mayonnaise, I use avocado oil mayonnaise
  • - 1 tablespoon coconut sugar, or plain sugar
  • - 1-2 tablespoons white vinegar, to taste (I used 1½)
  • - 1 teaspoon poppy seeds
Instructions
  1. Make dressing: Whisk yogurt, mayonnaise, sugar, white vinegar and poppy seeds until smooth. Taste and add additional sugar or vinegar to taste (I like to use as little sugar as possible). Season with just a touch of salt.
  2. Toss Napa cabbage, peaches, and dressing together until cabbage and peaches are evenly coated. Let sit for 20 minutes. Serve.
